Bacon, Jalapeño & Sun Dried Tomato Chicken Salad

This chicken salad is full of flavor and is a great meal prep lunch option! Whole30, Paleo, and Keto friendly!

The Perfect solution to your lunchtime meal prep needs!

I don’t know about you, but I love a good chicken salad. Mostly because there are so many flavors that you can mix and match and so many ways to eat it, that it’s so super versatile and I don’t get bored of it.

Plus, lets’s be real, just buying a rotisserie chicken and cutting it up to make chicken salad, makes your life so much easier. It’s on my grocery list every week to be quite honest. This recipe sticks to my idea that healthy doesn’t have to be complicated, and good flavor doesn’t have to mean a ton of ingredients that just really overcomplicate things. It’s so easy to still get flavorful food without a ton of complicated ingredients.

Here’s what you need:

  • 1 lb boneless/skinless chicken thighs, cooked and chopped small OR 2 cups chopped rotisserie chicken
  • 1/2 cup cooked and chopped sugar free bacon
  • 1 jalapeño, seeds removed and diced
  • 1/4 cup sun dried tomatos, diced
  • pinch of salt
  • 1/8 tsp ground black pepper
  • 1/2 Tbsp lemon juice
  • 1/4-1/2 cup Whole30 compliant Mayo- Start with less and build to your liking.

Instructions:

  1. Place all ingredients in a bowl and mix up.
  2. cover and refrigerate a few hours before eating
  3. enjoy!

Lunch for the week!

I’ll literally eat on chicken salad all week long. I mix it up by eating it on lettuce cups one day, spread on sweet potato toast another day, with simple mills crackers another day (if not on a round of Whole30 of course), or even just on a bed of lettuce with some yummy salad dressing. There really are so many options!

I hope you enjoy it! Check out my Easy Oven Bacon recipe to get your bacon done perfectly for this recipe!

A Mood. * Last night my husband went to pick up ou A Mood.
*
Last night my husband went to pick up our grocery order. While he waited he watched several families go in and out of the store. Two adults and multiple children. Strollers. Diaper bags, just casually out shopping like any other Friday night.
*
Please stay home. We’re all bored. We’re all going stir crazy. We all wish this wasn’t a reality. But the longer you don’t stay home except for going out for essentials, the longer we all will be doing this.
*
Do it for everyone who can’t stay home right now because they’re out saving lives, caring for sick people, selling you your groceries, stocking shelves, driving through the night to get your essentials into the stores, etc.
Don’t be an asshole.

Did you know that split, green, and yellow peas are now allowed on the @whole30?! Yep, true story!

Although I’m attempting to make light of somewhat scary and unknown times, it is important that we recognize and help the people in our country and communities right now who don’t know how they are going to feed themselves and/or their families today and for some time to come. I urge you to go to www.feedingamerica.org/take-action and donate to the COVID-19 response fund. $1 can provide 10 meals, so every little bit makes a difference

I’ve put the link for Feeding America in my link in bio for you ❤️

When my creative energy spikes, my physical energy does as well and all of a sudden I’m finally painting walls I’ve been meaning to for a year, and oh turning my house into a houseplant filled heaven (zen me!)

But I’m also harnessing some of that energy and putting it into new resources and projects to help you find success in your food freedom and long term habit change efforts

So hit me with what you need! What types of resources do you feel like would benefit you in your journey?!
