A healthy breakfast just got easier!
By now you know that I am a pretty regular Whole30 rooted person. But now and again even I need to change things up a bit, especially when it comes to breakfast. These Gluten free and Dairy free collagen overnight oats are the perfect item to add into rotation. They are high in healthy fats (from the coconut) and have plenty of protein (from the collagen peptides) to keep you feeling full and sustained. Plus they’re delicious and super low in added sugar if you want them to be!
I’ve been making them for a few years now and can’t believe I’ve never shared them! I literally survived the first few weeks of Charlottes life by living off these for breakfast since they were so easy to make ahead of time and eat with one hand if needed. Plus the oats really seemed to help my milk supply. Now, in my 3rd pregnancy, there are plenty of mornings where eggs just don’t sound good, but I still want something to hold me over until lunch. Luckily through all my rounds of Whole30 and reintroductions, I know I do well with gluten free grains, so adding these in doesn’t leave me feeling like crud a few hours later!
I specifically use Vital Proteins Collagen in this recipe and my morning coffee routine because I’ve been using them for 2 years and I absolutely love the changes I’ve seen since I started. Blueberry Coconut Collagen Overnight Oats
These overnight oats are perfect for busy mornings when you still want a high quality and filling breakfast! They’re gluten free and dairy free, but high in healthy fats and protein!
- 1/2 Cup Gluten Free Quick Cooking Oats
- 2/3 Cup Unsweetened vanilla almond milk
- 1 scoop Vital Proteins collagen pepties
- 1 handful Blueberries
- 2 Tbsp Shredded unsweetened coconut
- 1/2 Tbsp Honey (optional)
- 1 Tbsp Chia seeds (optional) (If you add chia seeds, add a touch more almond milk)
- Gluten free granola (Add as topping right before eating )
Mix everything but the granola together in a jar and place in the refrigerator overnight. Top with granola when ready to eat!
